淀粉是谷物碳水化合物的主要成分也是人和动物所需能量的重要来源。淀粉由于来源、组成及结构不同其在动物和人体内消化的速度和部位存在差异,如快速消化淀粉在小肠的前段即迅速消化而抗性淀粉(Resistant starch RS)在小肠内几乎不降解,主要在大肠内依靠微生物发酵产生挥发性,脂肪酸。
